I love cheese sauce. I love it on my fries (thanks Steers) and more importantly on my veggies. For Sunday afternoon lunch I love throwing a lot of different veggies in an oven proof bowl and then layering them in cheese sauce and fresh herbs. 

Below are my two favorite ways to make cheese sauce. The first one, I use for all my pasta dishes. It is based on the Italian bechamel sauce with added cheese sauce. A very simple recipe that takes about 5 - 10 minutes to make.

Method

* In a sauce pan, melt the butter until it starts to bubble.
* Pour in the flour and stir with a spatula to form a paste.
* Add in the milk a little at a time, whisking with a whisk to make sure that there is no lumps.
* The sauce will get thicker as you add the milk.
* Add the cheese and stir till it is all melted.
* Remove from the heat and season to taste.

This second way is my favorite for fries, tacos and basically anything that needs a dipping sauce.

Method

* In a sauce pan, heat up the cream.
* In a separate cup, mix the self-raising flour with the water. Stir to make sure all the lumps are out.
* When the cream is heated, slowly add the flour mixture to the cream. Stir till thick.
* Add the cheese, and stir till melted.
* Remove from the heat and season to taste.

When using this recipe for tacos or over chips, you can add chilli's or any other spices and amp up the flavour. I have added paprika spices and it was just divine!
