Christmas Ginger Cookies

Our family loves ginger cookies. Dipped in coffee and we are all very content. We have a ginger cookie recipe that has bee passed down from generation to generation. It makes the best cookies you could ever imagine. I thought I would share it with you.


* 125 ml honey (most recipes say syrup but we use honey instead)
* 100 ml soft butter
* 2.5 cup all-purpose flour
* 10 ml baking soda
* 10 ml cream of tartar
* 25 ml ground ginger
* 2 eggs
* 300 ml brown sugar
* A little white sugar for cookies


- Preheat the oven to 180 degrees.

- Melt the butter and honey until well mixed and set it aside to cool.

- Add the eggs and mix in.

- Slowly mix in the sugar, letting it sink in rather be mixed into the mixture.

- In another bowl, sift in the dry ingredients and spices before adding the wet mixture in.
- Mix it all together.

- Cover with cling film and let it rest in the fridge for an hour.

- After the mixture has cooled for an hour, take small bits of the mixture and roll into balls. On the baking tray, sprinkle the white sugar on the tray and push each individual ball down with your finger then using a fork make a design.

- Bake the cookies for 12 minutes.

- Remove and allow to cool.
